East West Partners, a Colorado-based real estate developer and master developers of Union Station (along with Continuum Partners) announced that Early Bird Restaurant, a breakfast and lunch favorite established in Westminster in 2012, will be opening a second location at The Landmark in Greenwood Village. The Early Bird’s new location will be at 5425 Landmark Place, just steps from Yanni’s and the Landmark Theatre, and is expected to open late this spring.

“While The Landmark is well known as a dining and entertainment destination, we’ve had limited breakfast options, so this was a top priority for us,” said Amy Cara, the partner at East West Partners overseeing The Landmark development. “Early Bird’s concept is perfect for The Landmark community, bringing a sophisticated breakfast experience to residents and visitors alike.”

Owners Daniel and Kristen Cofrades bring over 30 years of combined experience as professional chefs to Early Bird, a dining concept they created utilizing local and unique ingredients to offer fresh fare at an attractive price point. They created Early Bird’s concept and business philosophy of providing the best ingredients, preparation and presentation based on what they would serve their own family. The name, Early Bird, was even inspired by their daughter, Isabel, who was born prematurely at 33 weeks.

The Landmark location will serve as the Early Bird brand’s flagship restaurant with 45 full and part time employees, a full-service bar, private dining room, and the largest outdoor patio found at The Landmark covering 1,000 square feet. The indoor space will be 4,046 square feet, seating a total of 175 people. The Early Bird scene at The Landmark will reflect a big city vibe with its amenities and sophistication including an open-kitchen concept, while still offering small-town comfort and familiarity with its friendly service.

“After over a year of research, we chose The Landmark for our second location because we saw a need for a breakfast and brunch concept that meets the sophisticated taste of The Landmark residents and Greenwood Village community,” says Kristen Cofrades, chef owner of The Early Bird Restaurant. “As we come up on our fourth year in business with our first location, we are thrilled to expand our brand and hospitality down south to The Landmark and beyond to future locations.”

The new location’s menu will be similar to the current Westminster Early Bird menu. The culinary team applies professional cooking techniques to put a spin on classic favorites such as Early Bird Risers (open-faced puffed omelets), Biscuits and Gravy, Breakfast Burritos and Homemade Gluten Free Granola. Classic breakfast items will include Buttermilk Pancakes, Malted Belgian Waffles and Crème Brûlée French Toast. The restaurant’s lunch menu will feature Early Bird signature Salads, Sandwiches, and Stuffed Waffles – a waffle stuffed with unique ingredients and topped with braised meats and eggs, or healthier options of fruit and whipped cream.

The addition of a full bar offers the opportunity for chef owners, Kristen & Daniel, to create innovative and quality cocktails with a twist utilizing quality foods incorporated into classic cocktails and mixed drinks, such as a White Peach Tequila Sangria for the summer months and Sparkling Matcha Iced Teas.

Early Bird Restaurant will also offer a kids choice menu made with fresh, quality, nutritious ingredients. As parents themselves, Daniel and Kristen believe everyone benefits with the support of freshly prepared whole foods.
Early Bird Restaurant will be open for breakfast, brunch, and lunch at The Landmark seven days a week. Breakfast will be served all day.
